Greek-Style Tomato and Cucumber Salad

Pasta Salad

  • 1 can of diced tomatoes
  • 1 English cucumber diced
  • 60ml sliced green onion (2 branches)
  • 60ml of olive oil
  • 60ml of chopped parsley
  • ½ of a lemons juice and zest
  • ¼ chopped garlic clove
  • Salt and pepper
  • 100g pasta pearls (acini di grandpa or Israeli couscous)


  1. Cook pasta according to manufacturer's directions for tender cooking
  2. Mix the other ingredients together
  3. Drain the pasta and put it with the other ingredients, mix well
  4. Serve immediately warm or reserve and serve cold

Chef's Tip:

Do not be afraid to swap the grains to create a variant in the salad.
Cut the vegetables at the last moment so that they do not lose their water
