Grilled Caprese Panini

Serves 4


  • 1/3 cup (75 mL) Hunt’s Tomato Paste with Basil, Garlic and Oregano
  • 8 slices Italian loaf bread
  • 8 slices tomato
  • 8 fresh basil leaves, torn
  • 8 oz (250 g) fresh mozzarella, sliced
  • 1/4 cup (60 mL) grated Parmesan cheese
  • 2 tbsp (30 mL) olive oil


  1. Preheat grill to medium heat; grease grates well. Meanwhile, spread tomato paste over 4 slices of bread; layer tomato slices, basil, mozzarella and Parmesan over top. Cap with remaining bread. Brush outside bread slices with oil.
  2. Grill panini for 1 to 2 minutes per side or until grill-marked and toasted. Turn off grill. Close lid and cook for 1 to 2 minutes or until cheese melts (residual heat from grill will melt cheese.)

Chef's Tip:

Add a few slices of Italian salami if desired.
