Mediterranean Red Bean Dip

Red Bean Dip

Serves 4

Ingredients:

  • 1 can of ground heirloom tomatoes
  • 1 can of drained red beans (2 cups)
  • 60ml olive oil
  • 30ml of tahini
  • 15 ml of bread crumbs
  • ¼ shredded garlic clove
  • ½ of a lemons juice and zest
  • 5ml of cumin
  • 5ml of sriracha
  • 2 pita breads cut into pieces
  • 1 English cucumber in thin slices
  • 4 carrots sticks
  • 1 head of cauliflower cut into small bouquets

Directions:

  1. Mix all the ingredients together into the food processor, except the pita and the vegetables.
  2. Serve immediately with pita and vegetables

Chef's Tip:

This dip is delicious both as an aperitif and in a lunch!
